When faced with a mounting pile of cherry tomatoes, what does a gardener do? I Eat Them! Yum yum yum! Rooting through my frig and realized I had the perfect combo of ingredients to make my all time favorite dish from the garden: Cucumber Salad! You can toss this wish some pasta and olives too, but I like it clean, fresh and simple.
Ingredients
1/2 medium sized cucumber – diced
6-10 tiny cherry tomatoes
5 grams (about a tablespoon) fresh parmesan – grated
1/2 teaspoon apple cider vinegar
Pepper to taste
Directions
Place cucumbers, tomatoes, and parmesan in your favorite dish, drizzle with vinegar, sprinkle with pepper and toss! Yum yum yum all over again! It’s so fresh and crisp and delicious.
Red bell peppers, olives, pasta, and feta cheese are all great additions to this salad – I would swap cheese vs adding more though. In fact, just those four ingredients sound pretty good together! Once my peppers start ripening up (soon I hope) I’ll have to mix it up like that.
