Finally have some food for eating from the garden. I’m scarfing it all down as quickly as I can. I’ve stored the potatoes in the basement though.
Cucumber Onion Toss
This crunchy little treat is healthy, delicious and has a place of prominence as my afternoon snack.
1 cucumber sliced 1/4″
1 small onion cut in half and each half cut into 1/8″ slices
1 teaspoon white vinegar
1/4 teaspoon sea salt
Put it all into a food storage container with a tight fitting lid and shake, shake, shake.
Store in fridge (or with an ice pack) and enjoy within a week. I usually make mine in the morning and eat it for an afternoon snack.

sliced tomato, fresh basil leaves and either feta or fresh mozzarella. give it a crack or two of black pepper and maybe a touch of kosher or sea salt… yum!
Fresh cukes grated into plain yogurt, with a pinch of toasted ground cumin and a pinch of salt. Somehow, I find this salty, crunchy yogurt snack even more refreshing than a sweet, fruity yogurt snack on a steamy day.
