Out of the Garden and into my Mouth

Each Thursday I post about ways to be thrifty in the kitchen. To me, it isn’t just about being cheap, it’s about living creatively!





Finally have some food for eating from the garden. I’m scarfing it all down as quickly as I can. I’ve stored the potatoes in the basement though.

Cucumber Onion Toss

This crunchy little treat is healthy, delicious and has a place of prominence as my afternoon snack.

1 cucumber sliced 1/4″
1 small onion cut in half and each half cut into 1/8″ slices
1 teaspoon white vinegar
1/4 teaspoon sea salt

Put it all into a food storage container with a tight fitting lid and shake, shake, shake.

Store in fridge (or with an ice pack) and enjoy within a week. I usually make mine in the morning and eat it for an afternoon snack.
