I love chili so much! It starts as a nice warm yummy meal in a bowl and ends as chili dogs on buns. Yum yum yum. Last week I made a chili that turned out so delicious. I wasn’t really in the mood for cooking, or for going to the store, or for going out. So I dug around in the pantry and frig for whatever I could make quick and easy. Chili! Right there in the pantry. I just used what I had and so it was what it was and what it was turned out to be pretty freaking tasty. That’s what I love about rooting around in the pantry, you put things together that you wouldn’t normally. In this case it was red bell peppers. I’m sure many other people would consider them standard chili fair, but I really didn’t. I’m more a green pepper girl for chili.
Chili Again!
1 lb hamburger
1/2 large white onion
1 can black beans
1 can great northern beans
1 can tomato paste
1 red bell pepper
1 jalopeno
1 T chili powder
1 t black pepper
Directions:
Dice onions, jalopeno, and red bell peppers. Saute in olive oil until brown. Add hamburger, stir and mash up until completely cooked (about 12-15 minutes). Add all ingredients and stir. Let cook for 15 minutes. Serve with rice and enjoy. Then for lunch the next day enjoy chili dogs! Yum!
In the spirit of full disclosure, the picture above is not a picture of this chili, Jason and I scarfed it down before I took a picture, it looks a little more red tomato saucey, but pretty much the same.
Enjoy and stay warm and toasty!
Kristin
ps – sorry about the no post yesterday, the internet was down all day! It’s actually still down, so I’m at Jason’s office writing this.
Mmm! Chili is soooo good! I’m always making some during this time. I have a couple of great recipes I need to share, some time.
Try to add some honey in it, it’s soooo good!
