Using the Harvest: Green Tomato Round Up

  

  

I’m facing down 6 tomato plants FULL of green tomatoes this week. And other than fried green tomatoes, I couldn’t honestly think of anything to do with them.

I put the task to google and found 6 recipes I’m hoping to try out sometime this week and depending on the small batch success of them, I’ll then make buckets more to can (when appropriate).

 1. Salsa Verde. Yum!

 2. While I started this out only knowing about fried green tomatoes, that doesn’t mean I don’t want to eat them. They are yummy yum.

 3. Glazed and grilled? Could be a delicious addition to my final grill outs of the season.

 4. Green tomato relish. I love just about all relish, so I’m definitely giving this a shot, though I wonder if it’s really a salsa verde variation. Delicious either way!

 5. Green Tomato Bread. I can only imagine this turns out similar (and tasty) like zucchini bread. Did you know you can make a then freeze banana and zucchini breads? I bet you could do the same for this.

 6. Beef and Green Tomato cassarole with sweet potato dumplings! I can’t wait to make this for dinner. And I’m sure Jason will be pretty happy too.

7. I found quite a few of these in TipNut’s green tomato recipe round up.

8.  Italian Farmhouse Green Tomato Pickles by Lynne Rossetto Kasper sounded really good.

I thought I was going to be stuck with a bazillion green tomatoes as well, then I read that pulling the plant out from the root and hanging them upside down in a cool place will ripen the tomatoes. I was skeptical so I picked some to ripen in paper bags (usual method) and left the rest on the vines, pulled them out and hung them. That was several days ago and they are ripening like mad! I’m really happy with the results. Every couple days I just go and paw through the vines for the ripened or ripening ones.

    1. Oh that is such a good idea, i’m going to try that. Because as excited as I was about trying all these green tomato things, I really want to make homemade spaghetti sauce :)
